Month in Review: September ‘08

As the month of September comes to an end, we also wrap up the September is Salba Month here on Evolving Wellness.

Throughout this month the focus was to introduce you, the reader, to the nutritional powerhouse - Salba and the various food products from SourceSalba that are made with this amazing ancient grain.

We started the month off with a review of the original whole Salba seed and a very useful article for all those of us out there who enjoy chewing gum, entitled “Do You Know What Is In Your Gum?

In the middle of the month I presented you with a review of the Salba Life Flats and a thought provoking article, entitled “How Is Your Diet Affecting Climate Change?

We finished the month off with the final reviews of Salba products that included: the Rice Krispy Bars, the outstanding Whole Food Organic Fruit & Nut Bars and the Chewy Ancient Grains Bars.

Throughout the month we also learned the history of Salba and examined some popular Salba questions and answers.

This month, as always, a few new recipes joined our site, including one with Salba - the Organic Nectarine Salba Salad.

As for what’s in store next month? In October, Evolving Wellness will go back to its core focus of natural and balanced living in all areas of our lives for optimum health. I have a few excellent resource books to share with you regarding that topic and we are going to dissect what really is inside of the world’s so called “favorite” drink, Coca-Cola.

As well, October is known worldwide as Vegetarian Awareness Month and so Evolving Wellness will focus on some important vegetarian issues like how to get the most out of your vegetarian diet and the benefits of eating a vegetarian diet.

Quick Answers to Popular Salba Questions

 As September comes to an end, we are wrapping up the first annual “September is Salba Month” here on Evolving Wellness.

For our wrap up, I thought what better thing to write about then to share with you some facts and answers to popular Salba questions.

You may have heard about Salba yourself and be wondering if it is the same as Chia. You may have a certain disease or condition and be wondering if Salba is right for you. Or you may even be a new mom and wonder if Salba is safe to take during pregnancy or while breastfeeding.

Vegetarian Recipe: Broccoli Eggplant Ravioli

 TYPE: Lunch, Dinner            PREP TIME: < 30 mins

Goodies Needed

  • Olivieri Fresh Whole Wheat Broccoli & Cheese Ravioli
  • Fresh Corn on the Cob (preferably organic)
  • Tomatoes (organic)
  • Eggplant (organic)
  • Broccoli (organic)
  • Green Bell Pepper (organic)
  • Garlic
  • Olive Oil
  • Fresh Basil Leaves
  • Spices such as McCormick No Salt Garlic & Herb Seasoning

* Quantities depend on number of people you are serving and portion sizes

Preparation Steps

  • Wash the vegetables
  • In a large pan heat up a little bit of olive oil (2-3 tablespoons)
  • Mince some cloves of garlic
  • Cut up the broccoli into small pieces
  • Peel the eggplant and dice it
  • Dice the green bell peppers
  • Add the garlic, broccoli, eggplant and peppers into the warm olive oil pan
  • Chop up some basil leaves finely and add into the vegetable pan with some of your favorite spice(s)
  • Stir everything thoroughly and sauté on medium heat for about 10  minutes (or until desired texture of the vegetables has been reached), stirring from time to time
  • Cook the pasta as per package instructions (usually takes about 3 minutes in boiling water)
  • Once the pasta is cooked, drain it
  • You may want to stir in a little bit of olive oil to the pasta to prevent it from sticking
  • Steam the corn on the cob over or in a little bit of boiling water for a few minutes (or leave raw if preferred)
  • Cut up the tomatoes into quarters and arrange on plate
  • Once the vegetables, pasta and corn are ready arrange on plate as seen in photograph
