Vegetarian Recipe: Fruity Baby Greens Salad with Salba

Goodies Needed

  • Organic Baby Greens Lettuce Mix
  • Fresh Seedless Mandarins or Oranges (preferably organic)
  • Strawberries (preferably organic)
  • Bananas (preferably organic)
  • Salba Seeds - 2 tbsp (12g) per salad

* Quantities depend on number of people you are serving and portion sizes

Preparation Steps

  • Rinse baby greens and dry off using a salad spinner
  • Cut up baby greens with a knife, vertically and horizontally into bite size pieces
  • Peel and cut up mandarin/orange slices into small pieces
  • Peel and cut up the bananas into round slices
  • Rinse the strawberries and cut up into small chunks
  • Place desired amount of baby greens into a bowl and follow with a generous amount of the mandarins, bananas and strawberries
  • Sprinkle the salad with the Salba for extra nutritional benefits
  • No need to add dressing to this one as the fruits give the salad an amazing taste
