Goodies Needed
- This recipe comes from Koko of Koko’s Kitchen. Check out her recipe for the goodies needed and preparation steps.
- Instead of a vanilla bean, I used about ½ tsp of natural vanilla extract
- Instead of a berry garnish, I used a slice of lime as this cheesecake tastes just like key lime flavor
- The coconut oil I used was semi-solid and it worked great too
- I also found that the 2 cups of macadamia nuts makes a pretty thick “crust” (as seen in photo), for a thinner crust use perhaps 1&1/2 cups
- I also did not fully thaw the cake, but ate it chilled from the freezer, as I found this makes it almost like an ice-cream cake

Notes
- This “cheesecake” is both raw and vegan, and tastes even better than it looks!
- It is rich in calories, but probably not much different than regular cheesecake
- While most vegans and raw foodists can safely enjoy this, keep in mind that while this is all natural and made with healthy ingredients, if you live an already high-calorie lifestyle, this is just going to add a lot more calories to that diet
- In terms of cost, you should expect to spend about $15-$18 on the ingredients necessary
- Enjoy substituting this nutritious cake at birthdays and other special events and impressing your guests
- Have fun making it and I have no doubt you will enjoy it!

Looks amazingly delicious. :) I tend to use replacements for the original recipe ingredients too, makes it that extra special for me, as I know what I like and what would be best suited. :)
