Preparation Steps
- This recipe works best with leftovers of rice and beans (i.e. previously cooked brown rice and white beans)
- Rinse the tomatoes, broccoli and limes
- Heat up a small amount of olive oil in a large pan and add in some rice and beans
- Cut the lime in half and squeeze some of the lime juice (more or less according to your taste buds) into the rice-bean mix
- Heat this mixture on medium or low for about 10 minutes, or until rice and beans are slightly brown
- You can also add in some other favorite herbs into this like thyme or basil
- Cut up the tomatoes and broccoli into small chunks and set aside
- You can keep the broccoli raw or steam for a few minutes over some boiling water
- Once the rice and beans are ready, place appropriate quantities on plates
- Add generous amounts of the tomatoes and broccoli on top of the mix
- Garnish with low-fat, organic Feta cheese and a lime slices if desired
- This meal is a source of complete protein, fiber, many vitamins and minerals, and as well it is very low in fat
