I'm all about the egg/bean combo, especially scrambled eggs and black beans. Add some salsa, a corn tortilla, and I'm in migas heaven. I've heard of carrot/apple juice before, but never thought of grating them both into a salad. I'll have to try that! I bet it'd be good with parsley and raisins. Yeah!
